The Greek island of Santorini has an impressive landscape of contrasting blue and white. It is no exaggeration to say that Assyrtiko, the local variety of this island, has been the most popular white grape variety for the past few years. The strong winds from the sea give both the grape's cultivation and its flavor a unique character.

The salty, gum-tightening acidity is felt from the moment the wine enters the mouth. Aromas of lemon and white peach are found in the back of the mouth, while smoky nuances are present in the lingering finish.
